Oatmeal, Raisin and Honey cookies (Christmas)

I'm trying to commit to this blogging thing, and succeeding so far!


I was feeling lazy today, after doing too much work, so I decided to make some cookies. However to make them slightly guilt free, I made oatmeal, raisin and honey ones. I was pleasantly surprised with how cinnamony and Christmassy they tasted, and would definitely remake them for a Christmas party or even gift for a friend. Fortunately they were quick to make and turned out to be delicious!


Here's the recipe I used to make them:
1. Preheat oven to 150°C (fan 130°C, gas mark 2) and line two trays with baking paper
2. Mix plain flour (150g), oats (90g), cinnamon(2tsp), sugar(200g), raisins(90g) and ground/crushed almonds(70g) together
3. Melt the butter(125g) in the microwave and then add honey(2tbsp), bicarbonate of soda(1/2 tsp) boiling water(2tsp) and honey(2tbsp)
4. Stir both the warm butter mixture and dry flour mixture together.
5. Create small flat topped balls of mixture on the baking trays to your desired size, however leave space for them to expand and spread.
6. Bake for around 15+ minutes then leave to cool on a wire rack.
7. EAT AND ENJOY
